  • Overview

    The Corporate Director of Food & Beverage is responsible for providing support, leadership and oversight of the food & beverage strategies and activities for our global hotels & casinos (both managed and franchised).  This position is a business partner to the corporate and property teams and helps achieve food & beverage goals by proactively researching markets, trends and the development of key programs and concepts.  The Director harmonizes the culture, mission, values and quality standards to ensure maximum potential is achieved.  This person must create an exceptional climate of professional and personable service that ensures the engagement of employees, guests, owners and investors.

    Responsibilities

    • Generate forecasted performance pro-formas for projects & concept presentations based on market specific information.
    • Develop and implement food & beverage strategy that aligns with organizational policies and goals.
    • Develop food and beverage concepts and programs across multiple hotels & casinos, meeting brand, regulatory and other requirements.
    • Monitor and analyze each food & beverage outlet's financial performance and contribution to hotel/casino profitability.
    • Work with property teams to develop realistic and attainable budgets and accurate forecasts for food and beverage operations.
    • Develop effective food preparation and cost management strategies, with emphasis on product quality and waste minimization
    • Develop menu, preparation, and profitability models, creating market- specific programs that are competitive and manageable
    • Manage the food & beverage aspects of the Operations Critical Path for openings of new hotel/casino locations, completing all tasks on time and on budget.
    • Develop and manage a sourcing and networking plan to ensure strong knowledge of potential candidates in the various marketplaces where Hard Rock operates.
    • Prepare, analyze and deliver food & beverage metrics and reports.
    • Act as a resource to business partners regarding issues and recommend changes when needed.
    • Review food & beverage aspects of annual budgets and business plans for managed locations to ensure the smooth operation of the hotels/casinos and achievement of metrics.
    • Create processes and be accountable for ensuring collateral materials are on brand and meet the standard set forth by F&B marketing.
    • Collaborate with Purchasing, Operations and legal representatives to develop vendor agreements as needed.
    • Assist with kitchen design and capital project implementation for new and existing facilities.
    • Visit locations to evaluate delivery and to provide guidance and support to food and beverage teams.
    • Develop and implement programs to train team members in procedures and techniques for effective and safe food preparation and service
    • Participate in talent acquisition for key executive food & beverage positions in managed hotel/casino properties.
    • Establish food & Beverage requirements by studying organization plans and objectives, and researching various international markets.
    • Communicate with regional and corporate leadership regarding issues, risk and liability concerns, or other important business matters.
    • Operate ethically to protect the Hard Rock brand. Utilize programs designed to help Save The Planet.
    • Support property leadership in sourcing, interviewing, hiring, training, and developing food & beverage talent.
    • Contribute to the strategic development and management of career paths and succession plans.
    • Maintain effective communication, giving direction, support, timely feedback and recognition of performance.
    • Create a positive environment in which all employees have the ability to maximize their potential. 

    Qualifications

    • Must have 5 + years’ experience in a food & beverage leadership role, ideally in a corporate environment, all-inclusive property and/or cruise ship
    • Must have a bachelors degree in culinary arts, hospitality, business or related discipline from an accredited institution.
    • Must have held a food & beverage director or equivalent in a multi-cultural national or international organization for 5 or more years.
    • Deep understanding of restaurant and nightlife concept development.
    • Proven track record of health and safety excellence.
    • Experience supporting multiple business locations in multiple cultures preferred.
    • Must be a self-starter with an entrepreneurial spirit who is enthusiastic, energetic and personable.
    • Must have the ability to travel internationally up to 60% of the time.
    • Comprehend and use technical or professional language, either written or spoken, to communicate complex ideas.
    • Must possess strong communication and listening skills, excellent speaking, reading and writing.
    • Ability to effectively present information in one-on-one and large group situations to business partners and candidates.
    • Multiple language abilities required (Spanish fluent and Portuguese conversational), fluency in English required.
    • Working knowledge of various software applications including but not limited to Microsoft Office Suite and POS Systems.
    • Ability to effectively deal with internal and external customers and staff, some of whom will require high levels of patience, tact, and diplomacy.
    • Established assessment and decision making skills with proven ability to build relationships and influence at all levels of the organization.
    • Excellent time management, organizational and follow-up skills. Has the ability to set priorities, organize time, demonstrate initiative and work independently.
    • Use logic to define problem, collect information, establish facts, draw valid conclusions, interpret information and deal with abstract variables for unique or unfamiliar situations.

    • Ability to effectively deal with internal and external customers and staff, some of whom will require high levels of patience, tact, and diplomacy.
    • Fluency in English: additional languages preferred.

    • Deep understanding of lifestyle hotels and premium dining products and services.
    • Passion for music and knowledge of music trends preferred.
    • Self-starter with an entrepreneurial spirit and strong organizational skills
    • Must meet legal requirements for any required licensing.
    • Ability to travel occasionally.
    • Ability to work evenings, weekends, and holidays, as needed.
